Almond Fish and a bit Spinach

Instructions

In a medium size bowl marinate the fish with lemon juice, salt and pepper.

Thaw La Huerta Spinach in the microwave oven.

In a medium sized pan over medium heat sauté the onion adding butter and the spinach. Cook for 2 min. Season.

In another medium size bowl beat the egg until you get a homogeneous mixture.

On a large plate mix the bread crumbs and chopped almonds.

Cover each filet of fish with some flower, pass the fish through the egg mixture and then cover the fish with the bread crumb and almond powder.

In another medium sized pan heat the oil over low heat and fry the filets for 3 – 4 min. each side or until they are golden brown.

Remove filets form the frying pan and leave on absorbent paper towel to remove the excess of oil.

On a plate place filets on a bed of spinach. Accompany with tartar sauce..Note: To save time you can substitute the almond fish with fish fingers.
