Mushroom and Poblano Stuffed Steak Rolls

Instructions

In a skillet, sauté the onion in olive oil.

Add the beans and cream, cook for 3 minutes, add the epazote leaf, and wait for it to boil. Set aside.

In a skillet, sauté the sliced onion in butter.

Add the mushrooms and poblano strips, season with a little salt and pepper, and cook for 5 minutes, stirring constantly.

Stuff each steak with some Manchego cheese and some mushroom and poblano filling, roll up, and tie with a string, season lightly with salt and pepper.

Add butter to a skillet and sear the 6 rolls until they have a light golden color or the desired doneness.

Serve a roll on a presentation plate and pour the hot bean sauce over it.
