In a skillet, sauté the onion in butter, add La Huerta Corn with Strips, and season with a pinch of salt and pepper.

Cook for 3 minutes and add the white wine. Let it reduce for 3 minutes and add the whipping cream, season with salt and pepper; cook for 6 to 8 minutes until boiling. Set aside.

Season each salmon fillet with a little lemon juice, salt, and pepper, and cook on a grill or skillet with a little olive oil until fully cooked.

To serve: Place a portion of the salmon fillet on the plate, drizzle with a little Corn with Strips sauce, and sprinkle a little Cotija cheese on top. *As a suggestion, serve with La Huerta Peasant-style Rice.
