Instructions

Blend 2 cups of mayonnaise, 3 cloves of roasted garlic, ¼ cup of chopped cilantro, ½ cup of water, salt, and pepper to taste, and set aside.

In a skillet, heat the olive oil and sauté the garlic and onion. Add the tomato and cook for 3 minutes until it starts releasing its juices.

Add the marlin and corn kernels, season with lemon juice, salt, and pepper. Cook for 6 more minutes. Set aside.

Fill the La Huerta Stuffed Chilies with this mixture, place in a baking dish, and bake for 8 minutes at 180°C (356°F).

To serve, place a stuffed chili on a plate and top with some roasted garlic and cilantro sauce. Sprinkle with some fresh chopped cilantro (optional).
